- 1 lb Gaspar’s Linguiça
- 1 lb stew meat cubed
- 1 large onion chopped
- 1 clove garlic chopped or (1 tsp. powder)
- 2 tbsp butter or margarine
- 6 potatoes peeled and cubed
- 4 carrots peeled and sliced
- 2 boxes frozen kale
- 1 can red kidney beans
- 2 beef bouillon cubes
- salt and pepper to taste
In large pot melt butter, saute onion, garlic and stew meat until lightly browned. Cover with water and simmer uncovered for one hour. Add Linguiça, potatoes, bouillon cubes, and salt and pepper. Cover with water, simmer for another hour. Add kale and kidney beans simmer for 45 minutes. Serve with Portuguese bread. Serves 8.
