- 1/2 lb Gaspar’s Linguiça
- 1 lb string beans
- 1 small onion diced
- 1/2 green pepper diced
- 2 potatoes
- 1 8 oz can tomato sauce
- 1 tbsp cooking oil or butter
- 1/2 tsp ground allspice
- salt and pepper to taste
In large saucepan or soup pan, saute onion and pepper in butter or oil until onions are tender. Dice potatoes, cut linguiça and string beans into bite size pieces. Add potatoes, linguiça and beans to pot and cover with water. Add tomato sauce, allspice, and salt and pepper to taste. Cover and simmer until beans are tender (approximately 1 hour). Serve with French bread or hot buttered rolls. Serves 4.
