- 1 large onion sliced
- 1 small green pepper sliced
- 1 lb Linguiça sliced
- 1 box (16 oz) macaroni shells
- 8-10 ounces Velveeta cheese cubed
- 1 can (16 oz) tomatoes
- 1 1/2 cups evaporated milk
- 1 egg
Cook macaroni according to box directions and drain. In large skillet saute Linguiça, onion, and pepper until peppers are cooked. Add tomatoes and cook until bubbly. In 2 quart casserole combine Linguiça mixture and cooked macaroni. Beat egg, add evaporated milk, pour over casserole. Mix in cubed Velveeta. Bake uncovered at 350 degrees for 30-35 minutes. Serves 8.
