- 1 lb Gaspar’s Linguiça or Chouriço peeled and crumbled (or 1 lb ground if available)
- 1 1/2 lbs fresh green beans
- 2 large cans crushed tomatoes
- 2 large cans tomato sauce
- 1 large onion chopped
- 2 large cloves garlic minced
- 2 bay leaves
- 1 cup red table wine
- 2 potatoes peeled and cubed
Lightly brown Linguiça or Chouriço in frying pan and drain. If desired cut string beans into bite sized pieces. In large saucepan cook drained Linguiça or Chouriço and all other ingredients except potatoes on low heat for 45 minutes. Stirring occasionally. Add potatoes and cook 30 minutes longer or until potatoes are tender. Serves 4.
