- 1/4 lb Gaspar’s linguiça or chouriço sliced 1/4 pieces
- 1 slice of bacon cut into small pieces
- 1 medium onion diced
- 2 cloves garlic minced
- 2 medium potatoes peeled and diced
- 2 cups fresh kale or 1 box frozen kale
- 4 cups water
- 1/3 cup heavy cream
Place sliced sausage in large pot over medium heat saute about 2 minutes, add onion cook for two minutes. Add garlic and potato, cook for two minutes. Add broth, kale, and vinegar bring to a boil, reduce heat, cover and simmer for 30 minutes. Season with salt and pepper. Stir in diced tomato and cook uncovered for 15 minutes. Serve 4.
