- 1 (20 ounce can of fava beans)
- 1/2 lb chopped Linguiça or Chouriço
- 1 medium onion chopped
- 1/2 sweet pepper chopped
- 1 medium clove garlic chopped
- 1 tbsp oil
- 1/4 cup catsup or tomato sauce
- 1 tbsp chopped parsley
- 1/4 tsp cinnamon
- 1/4 tsp ground cumin
- 1 bay leaf
- salt and pepper to taste
Saute onion, pepper and garlic in oil. Add ground Linguiça or Chouriço saute approximately 8 minutes. Stir in spices, leave bay leaf whole. Add tomato sauce and simmer for 10 minutes. Gently stir in fava beans, simmer for 10 minutes. Serve hot or cold.
